Bee's Knees
Prohibition-era gin cocktail — honey and lemon were used to mask the taste of bathtub gin. Now it’s just delicious.
Ingredients
2 ozgin3/4 ozfresh lemon juice3/4 ozhoney syrup (1:1 honey and warm water, stirred to combine)
Instructions
- Combine gin, lemon juice, and honey syrup in a cocktail shaker.
- Fill with ice and shake hard for 10–15 seconds.
- Strain into a chilled coupe glass.
- Garnish with a lemon twist.
Notes
- Honey syrup: Equal parts honey and warm water. Stir until dissolved. Keeps in the fridge for 2–3 weeks. Do not use straight honey — it won’t mix properly when cold.
- Gin matters. Recommended: Opihr (spiced), Empress (color), The Botanist (floral).
- For a lighter version, use
1/2 ozhoney syrup. - Works well with lavender honey for a floral twist.
