Sonoma Goat Cheese Torta
Ingredients
1 lbmild goat cheese1/2 cupunsalted butter, semi-melted (1 stick)6 ozsun-dried tomatoes packed in oil (but drained)2 cupsbasil, firmly packed4 clovesof garlic1/2 teaspoonsalt (pinch)1/2 teaspoonpepper1/3 cupolive oil
Instructions
1. Blend
- Blend goat cheese and semi-melted butter
- consistency of spreadable cream cheese
- set aside
- Blend sun-dried tomatoes
- consistency chopped but spreadable
- set aside
- Blend basil, garlic, salt, pepper
- drizzle in oil while blending
- consistency of puree
- set aside
2. Assemble
- Line a
3 cupmold or loaf pan with plastic wrap - Spread
1/3goat cheese - Spread
1/2 cupbasil mixture - Spread
1/3goat cheese - Spread all sun-dried tomatoes
- Spread with remaining goat cheese
3. Refrigerate
- At least one hour.
4. Serve
- Flip onto plate, eat with crackers or other crunchy fun things
Origin Story
My mom makes this for special occasions, and since we consider seeing family a special occasion we have this a lot. It always reminds me of family and seeing everyone over the holidays
